Trout Fingers

Step 1
Filet trout by removing bones

Step 2
Remove skin from filet.
Cut filets into 1/2 strips and wash with cold water.
(Trout Skin has a lot of oil that changes the flavor of the fish)

Step 3
Mix 1 cup of fine cornmeal with 1/2 cup of flour

Step 4
Mix in 2 tablespoons of Tony Cacheres

Step 5
Dip trout strips into milk and coat with dry batter.

Step 6
Fry in hot oil (350 degrees) for 4-5 minutes. Trout fingers are small and will dry out if cooked too long.

Step 7
Serve with ranch dressing or tartar sauce as dipping sauce.
